No, offset provides a deadband at the start of stick travel

But if you are using a 3 position switch and then offset the start of the "curve" would you reduce the aileron defection at the switch mid position ?

Probably, but it would be a very limited amount of adjustment, and only in one direction, and would apply equally to both left and right so if there is a travel difference due to slight differences in servos and linkages you have to head over to the servo balancer and start fiddling with that. Using modes gives each servo its own value, and the full range of possible values at each switch position. Using modes is quick, accurate, and does it all.
